When someone has a knife, and you already pulls his knife, that's a different situation. If he has the knife, but he has not pulled his knife on his hand, that's another situation. If you see he is about to draw his weapon, you can stop him right there. When he has the knife on his hand, it gets a little difficult.

Now if you are in a position where the attacker has already held a knife on your throat, that is a serious situation. You know what to do or how to disarm a knife on your throat. The question is, does it work in real life?

I see most of the time when people talk about defending a knife in this situation, they overlook the psychological part. If someone says that you need to say this and that to impress the girl, and you just memorize those words. When you say those things to a girl, that might not work if you do not understand the situation or the psychological part.

So when the attacker holds a knife on your throat, any move, whether it is right or wrong (you can talk about that another time), can put your life in danger if you overlook the psychological part. The attacker is not stupid. If he sees a little movement, he can also move a little, and since the knife is already on your throat, you can easily guess what would happen next.

You can talk to the attacker and give him what he wants. If you get distracted or you make him distracted for a moment, you can make your move at that time. Let's watch this video. All video credit goes to Master Wong.
